Running out of time . . .

So friends I'm 26 weeks today.  It's getting close to the third-trimester line.  And have I filled the freezer?  Not really. 

I have the usual staples that can be found in there:  turkey, a few bread kits, popsicles, frozen veggies, prepared beans, rice, and loads of pepperoni that was on sale for 50 cents a pack.

But the plan starting this week, as we also start school, is to add more bread kits, dinner rolls and dinner roll kits, Grandma Kahn's Perfect Pie crusts, pumpkin walnut muffins, peanut butter & jam sandwiches, banana nut bread, breakfast burritos, stuffed potato skinschocolate chip cookies, Frozen Apple Coffee Cake and at least 30 dinner entrees including:

Bun's first cream cheese chicken


Cream Cheese Chicken
Cheesy Broccoli n' Bacon Soup
Lasagna
Chicken Tortilla Casserole
Chicken Soup
Bacon Cheeseburger Rice
Sausage Casserole
Oven Stew
Chicken Cordon Bleu Casserole
Grandma's Corn Chowder
Cowboy Sandwiches

So you might not see me for a while.  Or maybe you will if I get overwhelmed and need to procrastinate some more.

Good luck! I've been discovering the wonderful joy of a big freezer recently, especially now that I'm pregnant. I stored up a few meals and things when we were 'trying,' and I'm so glad I did. Once I hit the second trimester (in a week, gasp!) I'll be storing them up again. If you need more ideas (which it doesn't look like you do) I'm all full of them! I just learned that cooked meatballs freeze great, and can be pulled out in whatever number you need for meatball sub sandwiches, spaghetti, or all kinds of dishes.

And just out of curiosity, is that Chicken cordon-bleu casserole you mentioned my recipe? If so, I feel majorly honored... ;)

The Chicken cordon-bleu casserole is a recipe I got from Candace J. in the Frozen North. I just checked out your recipe-- which is quite similar. I may have to try both!

I wandered upon your blog today and I'm so glad I did. I just hit 30 weeks today and have been trying to figure out what meals I could make and have in the freezer. You are a lifesaver!!! Congrats on baby #7.

I do homemade pigs in a blanket for the kids just using my regular bread recipe. They can pop them in the microwave after school etc.

Since you have tons of pepperoni, make some mini-pizza crusts and freeze them. The older kids can top them as they please and microwave them. To get a nice, flat, even crust- bake them with a cookie sheet on top. I use parchment when I bake and slip it between the top and bottom of the dough.

I am so jealous! I need to start freezing meals because our week nights are so hectic between getting home from work and soccer practices and homework...that would help me out so much!
