7-layer vegan burritos

I've had several people ask me recently what a family of 10 eats for dinner that's vegan AND keeps them full.  Here was tonight's dinner:

Refried beans
Diced Green chilies
Diced Tomatoes
Chopped Olives
Chopped Onions- choice of red or green or both
Chopped Spinach 
Diced Potatoes
Brown rice 

So, that's more than 7-layers.  But usually we don't put rice and potatoes in the same burrito.   Also, 8-layers doesn't sound right, does it?
