Overnight Almond Joy Oatmeal

"There's something so cool about eating out of a jar!" -- Bun, 9 year old 
It's not the best picture, but the taste is amazing!  I'm not an oatmeal lover, but this I could eat any time of day.

Combine the following ingredients and stir for one minute:

1/2 cup rolled oats
1 T. chia seeds
3/4 cup unsweetened almond milk 
2-3 T. shredded coconut 

Cover and let sit in fridge 4-6 hours or overnight.

In the morning, warm for 1 minute in microwave and add:

1 scoop chocolate protein powder 
(I prefer Juice Plus Dutch Chocolate Complete)

1/3 - 1/2 cup water 

Stir and enjoy!

TIP:  Prepare several of these in glass canning jars at a time and refrigerate.  They'll be good for at least 5 days in the fridge.
