In which you find out we've gone vegan

We recently started trying to eat a plant-based whole foods diet as a family.  That's basically vegan.  Except we also eat raw honey.  

It's a difficult thing to completely change our way of eating.  But we are getting better at it.  

Here the twins are on their thirds of milkshakes right before bedtime routine.  We have smoothies or milkshakes daily to pack in vitamins and nutrients.

This one had:

Strawberries (locally grown)
Bananas
Vanilla almond milk
Dates
Spinach (locally grown)
Chia seeds
Ground Flaxseed
Spirulina
Ice

Fun! I hope you have lots of success and post lots of recipes! Here's mine for you today:
Potato "cake"

Thinly slice 10-12 potatoes (or enough to feed your family. Mine will eat 6 or 7).
Layer in a cast iron pan, sprinkling each layer with salt and pepper and drizzle with olive oil. Do about 6 or 7 layers.
Bake at 400 degrees for 40-60 minutes, or until center is soft.
Cut into wedges and serve with chopped fresh parsley and chives. Ketchup, diced tomatoes, are also good on top.

Lisa- Thanks for the recipe Lisa! I know everyone will love it. One of Danny's favorite recipes is Dutch oven potatoes

Good for you! I also hope you'll post more tips and recipes. Like, where do you do most of your grocery shopping now? What are your favorite sources for foods? Can you still buy things in bulk?
