What's for lunch??

We've started homeschooling full-time this year for the three oldest children and preschooling the 3 year old. 
One thing I miss is the children bringing home the school lunch menu It always gave me good ideas for what I could make for the kids at home and sometimes for dinners.

So, I was wondering, if YOU could share your child's lunch menu with me.  Whether it be just the names of the meals from the school calendar or a list of your regulars at home, I would be MOST appreciative.  Could you ask your friends too?  Pretty please??

A little secret for you... most school districts post their school lunch menus online, free for the looking. Here's an example from Longview ISD, which is in East Texas. Why Longview? Because I entered LISD and that's the one that popped up, lol! I have no other relationship to it. :-)

There are so many great ideas on Flickr! Whole groups dedicated to healthy school lunches. I have a Laptop Lunchbox for my kiddo, and there is a great group with thousands of pictures of lunches.

I also really like the cookbook Vegan Lunchbox. Even if you use non-vegan foods (chicken instead of tofu, dairy instead of soy milk/yogurt), it gives lots of menus and recipes that are easy, quick and healthy.

one thing I heard of recently that I think is so cool is to do a weekly (or monthly) (or on rare occasion) ethnic meal. You can learn a little about a new country and try making some food from there. Good ones to try: Spanish tortilla (like a big omelete with potatoes and peppers and onions), French crepes, Chinese eggrolls, Thai curry (sometimes there's mixes at the store to make it really easy), English fish & chips... and that's just off the top of my head. Sure sounds fun to me!

Lee's preschool does a food experience once a week. I'm not sure what it completely entails, but I think the kids get to help cook the food. Since they're all four, I'm pretty sure it is incredibly simple. Here's the names of the food experiences: Faces, fun with muffins, firefighter flapjacks, policeman parfaits, happy teeth (That's for September).

Other things we love doing for lunch are: "Super Nachos" (I do mine differently than the school, see this dish on my food blog. The kids always love mashed potatoes, though I'm not a huge fan of potato flakes/pearls...NOT because of taste, but because of the salt and additives. But fortunately, mashed potatoes can be frozen! I never peel my potatoes, which can also make them really fast. OR they can also be baked in the microwave really fast for a baked potato. Serve that with a can of cream of chicken soup mixed with a can of chicken (drained) plus a half cup of frozen peas, and there's a quick chicken gravy to pour over the top!

okay. enough Lisa... You can't safely ask me for ideas on food. :D

We also home school & generally I cook extra the night before & we have leftovers for lunch - it's easy & all taken care of after a morning of educating!
